A good vegetarian crowd pleaser
So my journey towards a plant based diet continues. This is a recipe from The Happy Pear (https://thehappypear.ie) and was a good success in our house last night. This is definitely one I’m adding to my (slowly!) growing repertoire.
I added some cheddar cheese on top to give a bit more flavour and because I had some cheese to use up, but you can leave that out and keep it strictly vegan if you like.
My goal right now is to increase our plant based diet rather than going strictly vegan.
