Tomato Passata

A great way to use up any stray tomatoes!


Every so often you can find yourself with some tomatoes that are on their way out. This is a super easy recipe solution. Once you see your tomatoes are about to go over the top, just pop them in a saucepan and follow the directions below - you’ll never waste a tomato again. If you don't have time to make the passata right now, just chop the tomatoes and put them into the freezer in a labelled glass jar and you can just add them to a soup, bolognese, stew, pasta sauce, etc.


You can scale this recipe up or down as required - I've used as little as 100g of tomatoes to just make a small jar of passata.


Ingredients:

500g Tomatoes

3 garlic cloves

0.5 tablespoon Olive Oil

0.5 teaspoon Sugar


Method:

Put all the ingredients in a saucepan and bring to the boil. Turn down the heat and simmer for 10mins. Add salt and pepper. You can also add more sugar or some vinegar to taste. Allow to cool. Pass through a fine sieve and pour into clean jars. The passata will keep in the fridge for 1 week and in the freezer for about 3 months. It's great for pizza sauce, chilli beans or to add to stews/casseroles.
