If you like carrot cake, you have to try this recipe!
I'm a huge fan of carrot cake and this is the most delicious recipe I have found so far. It’s super easy, so it's a good one to try with the kids. My two don’t like the cream cheese icing and if it’s for the family, I’d suggest using normal butter icing. Personally, I love the cream cheese icing but it's not to everyone's taste. If you don't have time to make the icing, then simply sieve some icing sugar over the top.
It's a good way to use up carrots that are going over the top. If you don't have time to make it right now, just grate the carrots and freeze them (in 200g quantities) and you can make it when you do have time.
It doesn't make a huge quantity either and it's delicious so there'll be no waste!
