Easy, healthy & low cost soup that is a family favourite here!

This is a go to recipe in my house. It’s super quick to make, I will always have the ingredients to hand, it’s very cost effective, it has a perfectly smooth texture and, most importantly, it’s delicious! Thanks to the chopping, sautéing, and blending all happening in one bowl, clean-up is minimal too.
It’s a great recipe if you're trying to eat healthier, use up vegetables, or build a simple weekly meal planning routine. It also has extra protein due to the “hidden” lentils (don’t tell the kids!).
This soup is ideal for busy families, work-from-home days, weekend lunch time and school lunchboxes.
Cooking Tips
Make sure your Thermomix bowl and lid are really dry before you mill the lentils. Otherwise they can stick to every nook and cranny!
You can use tinned tomatoes if you don’t have fresh tomatoes
Go easy on the cayenne pepper. ¼ teaspoon doesn’t sound like much but that can even be very hot. Start with 1/8th teaspoon and you can always add more.
Serve it with a drizzle of pesto or cream or top it with some roasted chickpeas, toasted seeds, or finely grated parmesan.
Pro tip: Freeze small portions in jars for future use.
Low waste tips
You can add cooked/roasted veg if you have some to use up
You can add vegetables or herbs that need to be used up
If you have any soup leftover, freeze it in small portions in a jar for future use. Make sure to leave room for the liquid to expand. Don’t forget to label it!
